Crispy corn chilly pepper
Ingredients:
- Corn kernels - 200 gms
- Vegetable oil - for deep frying
- Corn flour to dust the corn – 100 gms
- Onion - one - chopped
- Spring onions - a few, chopped
- Green chillis - 2, chopped
- Pepper powder - 1/2 tsp
- Vinegar - 1/2 tsp
- Soya sauce - 1/2 tsp
- Sugar - 1 tsp
- Salt - 1 tsp
Preparation:
- Par boil the corn kernels and drain the water completely.
- Dust the corn kernels evenly with cornflour making sure each kernel is coated well and keep this aside for about 30 mins.
- Heat a wok and add enough oil required for frying.
- Fry the dusted corn kernels in steaming hot oil, till they turn crisp and golden brown.
- Once they turn brown, remove them from oil and drain excess oil using a tissue paper.
- Heat a pan and add one table spoon of oil.
- Add the chopped green chillies, and spring onions and saute them for a few mins.
- Add the fried corn kernels as well, along with vinegar, soy sauce and pepper powder and mix them together.
- Garnish with spring onions and serve it hot.
