Ingredients:
- Sliced Capsicums - 2 cups (preferably different colored ones. I used red, green and yellow capsicums)
- Butter/Ghee - 2 tsp
- Garam masala - 1 tsp
- Salt to taste
- Basmati rice - 2 cups - boiled
- Coriander leaves - for garnishing
For Masala:
- Mustard seeds - 1/2 tsp
- Urad dal - 1/2 tsp
- Corriander seeds (Dhaniya) - 1/2 tsp
- Red chillis - 2
- Curry leaves - a few
- Peanuts - little less than a hand full
- Jeera - 1 tsp
Preparation:
- Dry roast all the ingredients listed under "for masala" and grind them into a coarse powder.
- Add one table spoon garam masala to this powder, mix them well and keep it aside.
- Heat two table spoons butter/ghee in a pan and add in the sliced capsicums and little salt and saute them for a little while.
- Add the ground masala powder to the capsicums and keep stirring for a few more mins.
- Add boiled basamati rice and mix it up well along with the masala.
- Garnish with chopped coriander leaves and serve it hot with raita of your choice.
