Capsicum Rice





Ingredients:

  • Sliced Capsicums - 2 cups (preferably different colored ones. I used red, green and yellow capsicums)
  • Butter/Ghee - 2 tsp
  • Garam masala - 1 tsp
  • Salt to taste
  • Basmati rice - 2 cups - boiled
  • Coriander leaves - for garnishing

     For Masala:

  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/2 tsp
  • Corriander seeds (Dhaniya) - 1/2 tsp
  • Red chillis - 2
  • Curry leaves - a few
  • Peanuts - little less than a hand full
  • Jeera - 1 tsp


Preparation:


  • Dry roast all the ingredients listed under "for masala" and grind them into a coarse powder.
  • Add one table spoon garam masala to this powder, mix them well and keep it aside.
  • Heat two table spoons butter/ghee in a pan and add in the sliced capsicums and little salt and saute them for a little while. 
  • Add the ground masala powder to the capsicums and keep stirring for a few more mins.
  • Add boiled basamati rice and mix it up well along with the masala.
  • Garnish with chopped coriander leaves and serve it hot with raita of your choice.
